Mango Margarita

This recipe comes just in time for Cinco De Mayo. There is nothing better then having an all girl party, lots of laughter, great food, plenty of drinks, and so much catching up! It had been a while since I have entertained 40 some women, and boy did we have fun! A few years back, Pete and I came into possession of a Gourmet Ice machine that you can make frozen drinks in, so sorry Morgan I know that was a dream of yours, and we didn’t get one until after you left for college. So, you will just have to come and visit us sometime this summer! We have had so many different cocktails in this wonderful device, including these delicious Mango Margaritas. I was going to make these with fresh Mango’s but they were a little to pricey for the amount that I needed to make. So I made them with frozen Mango’s. This recipe is made just for you and your blender, since I’m sure you don’t own a Gourmet Ice machine, but if you do have one, email me, or send me a message, and I will give you the huge recipe for this delectable drink. I have a few more entertaining tips for you today. A really good friend of mine who I will name Robin Treat, said to me as she was leaving the party, “boy it was sure great not talking to you tonight”! If you know her you are not offended, you just laugh! I did feel really bad I didn’t get to converse with many people, but it really is hard catching up, when you haven’t seen some people in years. My Mother in Law had a solution to this problem years ago. She would have one party on Friday night, with one group of people, and then another party on Saturday night, with another group of people. This way you could talk to everyone! The only thing wrong with this, especially if you all know me, is that you have to clean up in between groups, of course I don’t mind the cooking and entertaining part, but honestly I hate to clean up! This party that I had recently was a group effort, since I had been visiting my Grandmother who is in a care center after her stroke. I only made one appetizer, Mango Margaritas, Strawberry Daiquiri’s, and White Peach Sangria, with recipe’s soon to follow. Pete and I will be serving these along with some other refreshing libations this summer so stop on by! Mango Margarita

1 10 oz frozen bag of mango’s

1 cup of your favorite tequila

1/4 cup triple sec

1/2 cup of sugar

3 Tbs. fresh lime juice

1/2 cup water

1/2 cup sprite

Put all into a blender and blend on high. Serve into coconut shells or Margarita glasses.
