Homemade Baileys

Dec 21st

This recipe for Baileys Irish Cream is so easy, you will want to make it all year long. It is so creamy with just a hint of coconut, I can’t wait until Christmas morning to have some in my coffee! It’s great on it’s own too, for your after dinner dessert. You will find that it is less expensive too then the real Baileys. I am all ready for the Holidays. P.J. our youngest son got home yesterday and Morgan get’s home Saturday. I’m so thankful we can all be together this Christmas! Yesterday while we were waiting to pick up P.J. at the Phoenix airport in the cell lot, this woman came up to our car and handed us a gift bag. Inside the bag was a delicious box of chocolates , along with a note that said You are Wonderful 26 Acts of Kindness Facebook.com/26 acts. She was handing these random gifts out to people waiting for their loved ones, 26 gifts. This random act of kindness really moved me. I was extremely teary eyed. I got out of the car and hugged her and thanked her for this special gift. I had heard some stories on Facebook about people randomly handing out money to strangers and doing good deeds in honor of the Sandy Hook Tragedy. I am definitely going to pay it forward. I don’t know what I’m going to do yet, but it will be 26 of something to bring a smile to a complete stranger. I want to thank this woman who was going car to car yesterday to bring a little bit of hope, peace and love to that cell lot at Phoenix Sky Harbor Airport, and the world. Think if we all did this great deed all across the world. Please pay it forward! Merry Christmas, Stacey

Homemade Baileys Irish Cream:

This makes one bottle:

2 eggs whipped

1 cup of your favorite whiskey, I just used a cheaper version because you don’t need to spend a lot, since it all blends together. And if you don’t want it this strong you can start out with a 1/2 cup and taste as you go. I like the flavor of whiskey so I used 1 cup.

1/2 tsp coconut extract

1 can sweetened condensed milk

2 Tbs Hersey’s syrup

Mix all together in a blender and pour into your favorite decorative bottle. Refrigerate immediately. This make a great Hostess gift for the Holidays. Enjoy!
