There is nothing better than Fresh Guacamole, fresh tortilla chips and a cold beer! Pete was picking up some groceries for me the other day, and asked if I would make him some dip. Of course I said yes, not only for him, but I love it too. He brings the avocados home and they areĀ  hard as a rock. I said oh I forgot to tell you to feel them and make sure they are soft, uh oh! Anyway I made this Guacamole for two a few days later. Guacamole is so healthy, except for the tortilla chips. So if you are on a health kick, dip some vegetables, or I could seriously just eat it plain. Pete and I had the most fabulous Saturday. I am obsessed with Food Trucks, we went to the Good Life Festival at Encanterra Country Club in Queen Creek Arizona. Tyler Florence and Duff Goldman were there from the Food Network. There were about 24 Food Trucks, if I could have, I would of visited each and every one. I think we lucked out eating at the two that we did though. The first was The Maine Lobster Lady, the line was by far the longest, I would say we waited about 20 minutes, was it worth the wait? Absolutely! I ordered the traditional Lobster Roll, and Pete had the warm Lobster Roll dribbled with just enough butter in a toasted fresh bun! Mine had a light mayo lemon sauce that was just perfect with huge chunks of white Maine lobster meat, I’m salivating right now. I can’t wait to find out where they will be next. The other food truck we visited was called J-Licious Tasty Tacos. We tried the 3 Taco special that included Duck Confit, pulled pork, and short rib Tacos. Each one was a unique flavor all on their own. The soft Tacos were delicious and the slaw and sauce for each taco was mouth watering! I will be craving these all the time! Even if I had to wait for hours for each of these wonderful Food Trucks I would, they were that good! We definitely picked the two very best! Guacamole for Two:

3 ripe avocados

1 Tbs Hot sauce, I prefer Cholula brand for this dip, but you can use whatever is in your refrigerator

1 tsp sea salt or more to taste

1/2 tsp black pepper

Juice from 2 limes

1/4 cup chopped cilantro

3 garlic cloves chopped

1/4 cup chopped yellow or red onion

1 small tomato diced

In a small bowl mix together all the ingredients except the tomato. Mash with a potato masher until just slightly chunky, add tomatoes and taste to see if you need more salt or pepper. Serve with tortilla chips or vegetables.
