Tomato Bacon Jam with Grilled Cheese

In honor of National Grilled Cheese month, and yes there is such a thing! Which by the way has to be one of the best food inventions ever! I have made Ashlee’s Tomato Bacon Jam and Muenster Grilled cheese triangles. You will never eat a grilled cheese alone again, with the combination of these cheesy little bites and the sweet and savory tang of the Tomato Bacon Jam, you will be craving these all the time! I first had these in NYC when our youngest son P.J. and his girlfriend Ashlee had us over for dinner while we were visiting for my Birthday. Ashlee made these for an appetizer and I thought I had died and gone to heaven! The Jam is made with fresh Roma tomatoes and the little sandwiches are made with Muenster cheese grilled in bacon fat and butter, sorry health nuts! For those of you that would like to skip the grilled cheese you could just dip crackers or vegetables into the jam, but since it is Grilled cheese month, I thought I would share this wonderful recipe. I hope you all had a great Easter or whatever you celebrate, we had a fabulous time with our good friends that came to visit from Tucson, Susan and Steve Heins. Pete and I have been friends with Steve since high school, but have just gotten to know Susan in the last couple of years. We so treasure their friendship and enjoyed them tremendously this last weekend. I was in my glory cooking for them. This is what I made, Tomato Bacon Jam with Grilled cheese, Guacamole, Lance’s Salsa, Mediterranean Phyllo Pizza, French Breakfast Puffs, which by the way are all on my blog. I also made Tish’s Birthday pasta, Marston California Orange Salad, Fresh Artisan Bread, Savory Breakfast Bread Pudding, sausage biscuits and gravy with fried eggs and hash browns, fresh baked banana bread, bacon wrapped filet mignon, au gratin potatoes, butter bread, Brittany Salad, fresh ham stuffed with garlic, deviled eggs, strawberry spinach salad, mashed potatoes, gravy, fresh rolls, and Ashlee’s Creamed Corn! I don’t think I left anything out, and all of these recipes mentioned I will be publishing soon on my blog, so if your mouth is watering now, just wait! Tomato Bacon Jam: by Ashlee Martin

8 slices of bacon (smoked)

1 onion diced

2 lbs Roma tomatoes (diced)

1-2 dashes hot sauce (or to taste)

1 1/2 tsp salt (or to taste)

1/4 tsp black pepper

1 cup granulated sugar

2 1/2 Tbs apple cider vinegar

Cook bacon until crispy, save 3 Tbs of bacon grease set aside and let bacon cool.

In a medium-large pot add tomatoes, onion, apple cider vinegar, sugar, salt, pepper, and hot sauce. Bring to a boil and constantly stir.

Crumble bacon and add to the boiling mix. Adjust to medium heat and continue stirring as often as possible for about an hour. Taste for salt and pepper/hot sauce.

Let cool and serve at room temperature. I have refrigerated it, and it’s just as wonderful cold!

For the Grilled Cheese triangles, for the four of us, I used 8 slices of white bread and cut the crusts off. Then put a slice of Muenster on four pieces of bread, top with remaining bread, to make four sandwiches. On medium high heat melt 3 Tbs butter into the reserved bacon grease. Grill until brown and bubbly on both sides. Cut into triangles and serve alongside Tomato Bacon Jam.
