Snowball Cookies

These little Snowball Cookies are my favorite Christmas Cookie as well as my Father’s. They are full of butter, powdered sugar, and pecans. I have already devoured half of them with my coffee this morning. Our boy’s/men are home now for the Holiday, and it is so nice to have the hustle and bustle of a busy house again. Pete said this morning he loves seeing P.J.’s basketball on the top of the stairs. Last night I made one of their favorite meals, homemade bread and baked ziti. My Mother came over and it was just great to be together as a family! Later in the evening we watched Saturday Night Live, to see if any of Morgan’s jokes made it to the Weekend Update. We laughed and laughed, and I just know someday they both will be working for Saturday Night live, I just feel it in my heart! I’m going to try and live in the moment, because I know this week will be going very fast. I never know when I will see them again, but hopefully we will get to go to NYC in March for my birthday. It’s very hard being so far away from them, but I know that is where they need to be! This may be my last post before Christmas, I might be able to post one more cookie recipe, but if not, I hope you all have a Merry Christmas or Happy Holiday! IMG_1623Snowball Cookies:

Makes 2 dozen

Recipe by ? I have had this recipe in my possession for years, so I’m not sure where it originated.

Ingredients:

1. 1 cup crushed pecans

2. 1 tsp vanilla extract

3. 1 tsp salt

4. 6 Tbs Powdered Sugar for the cookies, and 1 cup more for rolling the Snowballs in.

5. 2 cups flour

6. 2 sticks salted butter, my favorite is Land O Lakes, can you tell the difference? I certainly can!

Preheat the oven to 350.

In a kitchen aid or using another mixer, add all ingredients and mix until completely incorporated and the dough starts sticking. Roll into walnut size balls, place on ungreased cookie sheet and bake for 8 minutes. When completely cool roll Snowballs into powdered sugar.
