I love baby vegetables, like these little squash that I bought from Visser Farms the other day. Pete and I had cooked Cedar Plank Salmon on the grill last week and this is what I served on the side. Pete is a meat and potatoes man, he also will eat corn, if you consider that a vegetable, so I have been trying to think up ways to get him to eat more healthy. This recipe is so simple, just cut up your squash, add some olive oil, and just a little bit of butter, I used fresh thyme from my garden, a little pepper and my new favorite Thai Ginger salt from The Filling Station at Chelsea Market. I’m definitely going to order more of this salt when I’m out, I’m using it on everything. If you can’t find it where you live, just use sea salt or any flavor salt that you like. We just did foil packets and cooked it right along with the Salmon for about 20 minutes. The smoky flavor of the grill and the taste of the fresh thyme along with the Thai Ginger salt is out of this world, I promise you will want to make these babies this weekend! We still have not had to use our air condition yet here in Michigan, sorry to rub it in for people back home, but I’m sure our days are coming. I know it gets super humid here unlike Arizona where as you all know heats up like an oven. I’m so thankful everyday to be able to rent this little cottage on the channel on and off all summer. Pete can work from here in the mornings, thanks to modern technology, Monday thru Friday. Then we really relax on the weekends, wake up anywhere from 9 or 10, laze around all day, reading or going to the beach, play golf, nap, and walk down to the lighthouse for sunset’s. This is the place where Pete and I will be put to rest someday, hopefully not soon! Some people may not get what we see here, but it is our little bit of paradise. Maybe it is our Midwest upbringing, but there is just something very special about this place. These are my fresh vegetables from Visser Farms.
5 baby squash sliced into 1/2 inch pieces.
Place on tin foil.
Sprinkle 3 Tbs good olive oil over the squash.
add 2 slices of butter.
Sprinkle with 2 Tbs fresh Thyme.
Sprinkle with 1/2 tsp of Thai Ginger salt or your favorite salt flavor.
Sprinkle with 1/2 tsp black pepper.
Grill along side your favorite meats or fish for about 20 minutes.
