I made these little Coconut Macaroon cookies last week. I actually didn’t have enough coconut for what the recipe called for, so I thought I could get away with it. The first batch was a flop! I went and bought more coconut and this is the result. A perfect blend of sweet, crispy, chewy, coconut, melt in your mouth morsels of goodness! There are only 5 ingredients in these macaroons, and so simple to make. If you like, you could dip them in chocolate!
I have good news about my 97 year old Grandmother. She is wearing her lipstick again! She actually cares what her hair looks like, and is back to flirting with all the doctors and patients! She even sits with a 50 year old man for all her meals! She is getting stronger everyday, and the light in her eyes is back. She will have at least another week and a half, to two weeks of rehab. She then will be heading back to her assisted living place, with the help of 24 hour caregivers and nurses. I hope the sparkle in her eyes is not a fleeting thing, and that she will only get better, going forward. I know I can’t expect her to live forever, but I know it’s her wish to see her great grandchildren get married. Hopefully with her strong spirit and great attitude she will have her dream come true! We keep telling her when she reaches 100 years old, we are going to put her on television with Willard Scott. Who knows she will probably outlive him! Thanks for all your love, support and prayers!
She has been getting great care here at Banner Baywood Rehab. I would personally like to thank all who have helped her here, especially Pete and Allison. You both have her laughing and back to her normal self. You both have such a nice way about you, patient as saints, a great since of humor, and all out compassion. Thank you for what you do everyday!

Makes about 24 Macaroons
• 3 large egg whites
• 1/2 cup sugar
• 1/8 tsp. salt
• 1/2 tsp vanilla extract
• 1 14-ounce package sweetened shredded coconut
1. Preheat the oven to 325 degrees and line a baking sheet with parchment paper. Whisk the egg whites, sugar, salt and vanilla in a large bowl until combined; fold in the coconut.
2. Scoop heaping tablespoonfuls of the coconut mixture about 1 inch apart onto the baking sheet. Use your fingers to form into pyramids. Bake until golden brown around the edges, 20 to 25 minutes. Let cool 10 minutes on the baking sheet, then transfer to a rack to cool completely.
