I personally can’t think of anything more comforting than this Homemade Chicken Noodle Soup. The flu is going around, and it did not miss our house this year, Pete has been sick for three days. I however, am not going to get it. I was the dutiful wife though, and made homemade chicken stock and my Great Grandmother’s Homemade Egg Noodles. The noodles are under my index of recipes. I also have heard drinking whiskey and honey does a world of good for your throat, and of course I didn’t want Pete drinking alone so I indulged in our new favorite, Maple finished Crown Royal. A combination of all these ingredients will hopefully help Pete get over this flu quickly! I highly recommend this soup even if you are not sick, it is warm and comforting, and since it was down to 25 degrees last night in Arizona, we will be having leftovers for a few days. First the Homemade Stock:
2 whole chickens rinsed
1 whole yellow onion, leave skin on and cut in half
1 whole head of garlic, leave skin on and cut in half
1-1/2 Tbs whole peppercorns
1-1/2 Tbs sea salt
6 sprigs of fresh Thyme
10 springs of Italian parsley
a large stock pot
7 or 8 quarts of water, enough to cover the chickens
Put all ingredients in a large stock pot and stir.
Bring to a boil, then reduce heat to low for 4 hours.
Remove chicken from pot and set aside until cooled.
Strain the rest of the ingredients into another pan let cool and then freeze what you are not using for the soup for a later date. I ended up freezing about 2 quarts. This soup recipe will serve 8 to 10 people. Or I froze some for Pete and I.
Chicken Noodle Soup:
One recipe of Great Grandma’s Homemade Egg noodles on my site.
Heat approximately 6 quarts of Chicken stock in large pot
Shred chicken from the stock and add to pot
Bring stock to a boil and add
4 carrots cut into 1/2 inch slices
4 celery stocks with leaves cut into 1/2 inch slices
Homemade egg noodles
sea salt and pepper to taste
reduce heat to medium and cook for 1 hour or until noodles are tender
