Blueberry Coconut Cupcakes

I was asked last week to enter a contest for Bloggers called Blueberries Meet Their Match. The Website is US Highbush Blueberry Council, and the link to their site is littlebluedynamos.com. What could be better then the combination of Blueberries and Coconut with a buttercream frosting! This is my creation, and they really came out so moist and flavorful, with just a hint of vanilla. I used frozen highbush blueberries for this recipe, and sweetened Coconut flakes. You could make these for Christmas. I think the Coconut looks like snowflakes. Blueberries are so good for you, and can be used in so many recipes. They are a great antioxidant. I have used them in smoothies, muffins, pies, pancakes, and will soon be posting another recipe for the contest, for Blueberry Balsamic Syrup. Blueberry Coconut Cupcakes:

Makes 1 1/2 dozen

Ingredients for the cupcakes:

1. 2 sticks salted butter softened

2. 1 1/4 cup sugar

3. 2 eggs

4. 1/2 cup buttermilk

5. 1/2 cup whole milk

6. 2 tsp vanilla

7. 2 cups flour

8. 1 tsp baking soda

9. 1 tsp baking powder

10. 1 tsp sea salt

11. 2/3 cup sweetened coconut flakes

12. 1 1/2 cups frozen highbush blueberries

Preheat oven to 350 degrees

Beat softened butter for 2 minutes with an electric mixer. Add sugar and beat for one minute. Add the eggs and beat for one minute. Add vanilla. Add the buttermilk and whole milk and mix for one minute. In a large bowl, Sift together the flour, baking soda, baking powder, and salt. Add to wet mixture and beat until combined. Fold in Blueberries and coconut. Place muffin papers in bottom of cupcake pan. Fill mixture 2/3 full and bake for 25 minutes. Let cool before frosting.

Ingredients for Buttercream frosting:

1. 1lb bag or box of confectioners sugar

2. 1 stick softened salted butter

3. 1/2 tsp sea salt

4. 2 tsp vanilla extract

5. 1/2 cup whole milk

6. coconut for garnish

7. blueberry for garnish

In the bowl of an electric mixer, add confectioners sugar and butter, beat for one minute. Add salt, vanilla, and milk, beat until smooth.

Frost cupcakes when cooled, sprinkle with sweetened coconut flakes, and garnish with a blueberry.
