Caramel Corn
In honor of National Popcorn Day, yes there is such a day, I decided to make my famous Caramel Corn. It is not actually my recipe, but an old friend of my parents, her name was Geri Stein, however I don’t know if that is still her name. I remember going to stay all night at her daughters, every time I would stay there, we would have dessert for breakfast! I always thought that was the absolute best thing going! This popcorn was one of the treats we had. Still to this day, I will eat this Caramel Corn for breakfast with my coffee. The only bad thing about this recipe is you can’t stop eating it. Literally, I eat it for breakfast, lunch, dinner and in between. It is so addicting! If you don’t want to make it for your breakfast, it will be a great treat for a Superbowl party, after school treat, or just a special treat for you! It is so buttery and full of caramel flavor. It is truly easy to make. You can make the whole recipe or cut it in half. I usually make it at Christmas but didn’t get around to it this year. 4 sticks of salted butter, preferably Land O Lakes
6 bags of Orville Redenbacher’s Movie Theater Butter popcorn popped
2 boxes of golden brown sugar or 4 cups
1 cup Karo light corn syrup
1 tsp salt
1 tsp baking soda
2 tsp vanilla
Pop the six bags of popcorn, each one individually and spread on 4 large cookie sheets or large baking pans.
Melt butter, stir in brown sugar, corn syrup, and salt. Bring to a boil stirring constantly. Then boil without stirring for 4 minutes. Remove from heat and stir in baking soda and vanilla. Bake in a preheated 250 degree oven for 45 minutes, stirring every 15 minutes. Remove from baking sheets onto wax or parchment paper, let cool and break apart. Store in airtight containers. Enjoy!

I tried to make caramel corn once and I burned the caramel so bad to the bottom of my pan that I had to leave it out on the balcony to cool for the rest of the day, and then I threw away the pan. I really love it, though…maybe I will have to try your recipe next! It’s such a great snack to put out for parties.

Hi Sydney, I too have burned the caramel corn before. You just have to make sure to keep stirring it in the oven every 15 minutes. The recipe actually says to bake for 1 hour, but I feel that's to long. So I cut it to 45 minutes. Let me know how it turns out for you. Stacey
